This is not a stainless knife pretending to be Japanese. The cutting core is genuine Aogami No.2 (Blue Steel #2), sourced from Sanyo Riki in Japan — the same steel custom bladesmiths reach for when

Hardened to 62–64 HRC, it takes an edge most stainless knives simply cannot hold, and keeps it far longer. Three-layer san mai

The exposed cutting edge is high-carbon steel and it will react. Onions, tomatoes and citrus will develop a patina — a natural
grey-blue film that forms over time and actually protects the blade. This is not rust and not a defect. Wipe the blade dry after use and it will serve you for decades.
If you want a knife you can leave wet in the sink, this is not that knife. If you want the sharpest edge in your kitchen, it is.

THE PETTY
Petty is the knife you reach for when the big blade is too much. At 134 mm it sits between a paring knife and a chef's knife — long enough to handle a shallot or a fillet, small enough for in-hand work like peeling, trimming and segmenting citrus. Most kitchens have a chef's knife and a paring knife, and a gap in between. This fills it. Once you own a good petty, it becomes the
knife you pick up without thinking.
PERFORMANCE AND DESIGN
Blue Steel #2 is prized among Japanese blacksmiths for its balance of hardness, toughness and ease of sharpening. Here it sits between two layers of stainless steel, giving the blade corrosion resistance on
the flats while keeping the pure carbon cutting edge exposed where it
matters.
At 2 mm thick and just 69 g, this is a genuinely light knife. The rounded spine and choil relieve pressure on the fingers, and the
curved heel transition prevents accidental finger contact — details that matter on a knife you'll hold for close, careful work.
THE HANDLE
A traditional Japanese octagonal wa-handle in white maple, finished with a white buffalo horn ferrule. Hand-polished, light, and shaped to sit naturally in the hand whether you pinch-grip or hold the handle. The light handle shifts balance forward into the blade — where you want it.

CARE — IMPORTANT
Hand wash and dry immediately after use. Never leave the blade wet or in contact with acidic food (tomato, lemon, onion) for long. Never use a dishwasher. Store in a dry place — ideally in a saya (sheath) or a knife block. A patina will develop over time. Let it. It darkens the blade and protects the steel. If you ever see orange rust, it wipes off easily
with a damp cloth and a little baking soda — but with basic care, you'll never see it.
